Butter And Herbs Rice
PREPARATION: 20 minutes

INGREDIENTS
- 2 cups (500 ml) uncooked white rice
- 4 cups (1 L) chicken broth
- 2 tbsp (30 ml) butter
- 1 finely chopped onion
- 1 stalk of celery, finely chopped
- 1 small red pepper, finely chopped
- 1 tbsp (30 ml) Provence herbs
- salt and freshly ground pepper to taste
PREPARATION
- In a deep skillet or a heavy, uncovered Presto®-style pot, melt the butter over medium-high heat.
- Add vegetables and sauté them until tender (about 10 minutes).
- Add the chicken broth, rice and herbs. Add salt and pepper to taste. Mix well.
- Bring to a boil, then reduce heat and simmer. Cook until the rice has absorbed the liquid (about 30 minutes).
NOTES:
This rice can easily accompany any white meat (poultry, pork and fish).
