With the rack in the middle position, preheat the oven to 350 °F (175 °C).
Line a baking sheet with a sheet of parchment paper.
Prepare all the ingredients. Wash and rinse the potatoes well. Optionally, peel them prior to washing them
Thinly slice the potato chips and pat them dry. Use a mandolin for best results and evenly thick slices.
Place the slices into a bowl.
Add the oil and seasonings.
4. Mix well with your hands to coat all of the potato slices.
Place the potatoes onto a lined baking sheet.
Bake until golden brown and crispy. They will lift off the baking sheet when crisped.
Place in a bowl, serve as a snack or to accompany other dishes, or let cool and bag for later.
NOTES:
Rinsing well the potatoes helps remove the starch and ensure they get very crispiness.
Use your own favorite spices and herbs (fresh or dried) but make sure they are finely ground.
OPtionally, use your favorite dip sauce.
