In a saucepan, salt the water and bring it to a boil. Gently and continuously sprinkle the cornmeal and stir constantly with a whisk or wooden fork.
Whisk until uniform to prevent lumps from forming.
Add the butter in very small pieces and continue to whisk.
Keep the mămăliga over low heat until it thickens and begins to pull away from the edges of the pan.
Pour the mămăliga in a large bowl or on a wooden bottom, then serve with your favorite dish.
NOTES:
To enhance the taste, you can use 4 cups (1 L) of homemade or commercial chicken broth.
Traditionally, mămăliga is sliced with a rope or a wooden knife. But, you can use any bread knife. Mămăliga replaces traditional bread. You can slice it and garnish with either butter, cheese, sour cream or other toppings of your choice.
