Leak And Potato Cream

- In a saucepan, heat the oil over medium heat and fry the leeks and onion, stirring occasionally (about 10 minutes or until tender).
- Add the potatoes and broth, then bring to a boil.
- Reduce heat and simmer for 20 to 30 minutes or until potatoes are tender.
- Remove the pan from the heat and allow to cool.
- Pour the preparation into the jar of the blender or food processor, a small amount at a time, and mix until smooth.
- Transfer the preparation to a clean pan and bring to a boil.
- Reduce heat, incorporate cream, salt and black pepper to taste. Simmer for 15 minutes.
NOTES:
When serving, add chives (optional)
