Beer Fish Fillets

Beer Fish Fillets

  1. Cut the fresh onion and celery into large chunks and the tomatoes into cubes.
  2. Remove the seeds and cut them into large pieces.
  3. Chop the garlic, then the ginger.
  4. Prepare the fish by cutting the edges of the fillet with a knife. In China, carp is very popular but as its flesh can sometimes have a slight muddy taste, you can replace it with another fish like monkfish.
  5. Heat the oil in a pan and sauté the fish until it turns golden.
  6. Add the garlic, peppers and beer.
  7. Season with sugar, ginger, oyster sauce, salt, soy sauce. Cover and cook for 4 minutes.
  8. Add the tomatoes and turn the fillet over. Cover again and cook for 3 minutes.
  9. Add the fresh onion, celery and cornstarch to thicken the sauce if necessary. Season with white pepper and sesame oil. Serve.
