Smoked Meat, Danish Blue Cheese And Cremini Mushroom Alfredo Pasta

INGREDIENTS

PREPARATION

  1. In a large pot, add 6 l of water and 2 tbsp salt, and mix. Bring to a boil. For al-dente pasta, add the pasta and boil uncovered for 6 minutes. For more tender pasta, boil for 2 more minutes. Set aside 250 ml of boiled water. Drain pasta and set aside.
  2. In a large, deep skillet or large, thick, uncovered Presto®-style pot, preheat oil over medium-high heat. Add the mushrooms and smoked meat, and sauté until golden, for about 5 to 8 minutes. Stir in the garlic and the green onions, and cook for another 2 more minutes. Mix in the Alfredo sauce and blue cheese. If you wish to thin the sauce add up to 1 cup (250 ml) of the cooking water set aside. Bring to a simmer; reduce heat to low. Cover and cook on a low simmer for 30 minutes, stirring occasionally.
  3. Place desired quantity of cooked pasta in plates. Spoon desired quantity of sauce over pasta. Optionally, garnish with parmesan cheese. Serve and enjoy!
NOTES:
Best served with pickles cut in 4 in length & oven-baked garlic butter French bread baguette (see picture) or a smoked meat sandwich on the side.
