Potato Lobster And Shrimp Pate

With the rack in the middle position, preheat the oven to 350°F (175°C).
In a saucepan, place the potatoes. Cover with cold water and salt. Bring to a boil, then cover and cook for 15 to 18 minutes over low heat, until tender. Drain.
Purée the potatoes with 60 ml (1/4 cup) of milk and 30 ml (2 tablespoons) of butter. Salt and pepper.
In another saucepan, melt the remaining butter over medium heat. Cook the onion and mushrooms for 4 to 5 minutes.
Add the wine and simmer until the liquid has reduced by half.
Sprinkle with flour and cook for 1 minute, stirring.
Gradually add the rest of the milk and the cream. Bring to a boil while stirring.
Add the seafood. Season with salt and pepper and stir.
Fill a pastry bag fitted with a fluted tip with mashed potatoes. Form rosettes of mashed potatoes around the edges of the scallop plates.
Divide the seafood preparation in the center of the oven-safe scallop plates. Top with cheese. Sprinkle with paprika. Bake for 10 to 15 minutes or until cheese melts and turns golden to taste.
NOTES:
Let cool unused shell portions. Carefully, place each one in a microwave safe freezer bag (like Ziploc®), remove the most air possible and close tightly before freezing. To enjoy later, if shells are in metal, place them on a plate and microwave each shell for 2 minutes.
