Homemade Light Mayonnaise

Homemade Light Mayonnaise

PREPARATION: 15 minutes
REFRIGERATION: 1 hour
TOTAL: 1 hour 15 minutes
PORTION(S): approx. 250 ml (1 cup)

INGREDIENTS

PREPARATION (whip method)

  1. In a medium bowl, combine the lemon juice, egg yolk, mustard and salt.
  2. Add about the first third of the oil slowly, drop by drop, whisking continuously.
  3. When the mayonnaise begins to set, add the rest of the oil in a stream, still whisking.
  4. Pepper.

PREPARATION (food processor or blender method)

  1. In the container of the appliance, put the lemon juice or vinegar, the whole egg, mustard and salt.
  2. Cover and mix for a few seconds.
  3. Set the speed to the lowest speed.
  4. While the appliance is running, add the oil through the opening in the lid, in a continuous stream (the mayonnaise will set quickly, in less than a minute).
  5. If necessary, turn off the appliance and use a spatula to clean the edges of the container or to push the ingredients towards the blades.
NOTES:
Stays fresh for 5 days in the refrigerator.
